The Project For the past couple of months we have been slowly working on something quite special and a bit of a first in English whisky. We have been speaking to several iconic English breweries about using there brewers yeast for whisky production. We will now be producing new make using 4 different brewery’s yeast, where the only variable will be the yeast. The breweries involved in this project include Harveys and Fullers plus 2 more! All the new make will be made using Maris Otter malted barley, with identical mash procedures and fermentation profiles, the same distillation cut points and the same cask type. The new make will then be aged in identical ex-bourbon casks for a period of around 3-5 years, we are looking to age the spirit to whisky but not let the cask dominate. How this project will work and what’s included We will be producing all the new make and filling the casks over the next 10 weeks or so, with the new make tasting packs being shipped out before Christmas, these packs will include 4 × 10cl samples at cask fill strength (1 x 10cl sample per brewery yeast) . Once sent out there will be an on-line tasting event where Rich will go into greater detail about the yeast and production process. (Founders and Club members that get involved with this project at the start will also be given the opportunity to purchase 2 year old cask samples - this will be in addition to the original purchase) Once the new make has matured to whisky and we are happy with the liquid the final tasting pack will be produced and sent out which will include 4 × 20cl whisky samples, 1 per brewery yeast and the final samples will be at cask strength (sample packs sold to the general public will not be at cask strength). Cost The cost is broken down into 2 parts the first payment covers all liquid costs, duty, postage and vat on the new make samples - and is paid for with this purchase of £74 the 2nd payment which will be due before the final whisky samples are sent out covers the duty, vat on duty and postage of the final samples (cask strength), at current duty and vat rates this this is calculated at £26 and is likely to change, this amount will be invoiced separately. So the whole project will cost approx £100 for a total of 1.2L of liquid made up of 40cl of newmake and 80cl of cask strength whisky. These packs in this format and at this price will only be available to Founders and Club members. Pack sold to the general public will be at a higher price and the final samples will be at our typical bottling abv - 53% ish. Any questions please just ask
