Covered with a thin layer of ash, the slighthly wrinkled raw goat cheese, from Loire Valley, is recognizable by its ring shape. Inside the cheese, the paste is white, firm and homo geneous. Young, it develops some goatty and vegetal notes and a fresh acidity and has a fluffly texture.
