The nutty, browned coconut works well with the mild bitterness and subtle sweetness of the broccoli. Upkari is a popular Konkani recipe made by the people from coastal Karnataka and parts of Goa. Coconuts are abundant in this region and are a staple ingredient in many recipes. Rafi’s son, Lee, brought a version of this recipe back from his travels to India and it was first featured in our cookbook.
