The Brut Chardonnay is Brochet-Dolet’s sole Blanc de Blancs offering. It is made in very limited amounts each year form a small proportion of Chardonnay fruit kept aside specifically for this cuvée. The wine is aged for at least 2 years on lees and has a dosage of 10g/l. A wine with lovely breadth and richness, the nose and palate centre around a core of concentrated fruit – ripe yellow apples, white stone fruits and subtle zesty citrus. Morish notes of toast and brioche are well-balanced by fresh acidity and creamy, mouth-filling mousse. The finish is long with lingering citrus and will have you craving a second glass. A great example of a Blanc de Blancs with serious depth. It walks the tightrope between breadth and brightness beautifully, making it a fantastic match for oysters and seafood, roasted white meats and salad with chèvre chaud.
