Don't sleep on this broken rice dish when in Vietnam. Why broken rice? When rice is milled, some grains crack or break into small pieces. In the past, these “tấm” bits were conside red lower quality and sold cheaply, so workers and farmers in southern Vietnam used them to make meals.
