Cape Byron Distillery is committed to sustainability and environmental awareness in their distillation. Through these considered practises, they also hope to showcase the unique flavours and characters of the greater Byron Bay region (Northern Rivers) found in their spirits. Brookie's Mac liqueur is a beautifully smooth nut liqueur with a quintessentially Australian twist. Locally sourced macadamia and wattleseed are respectively roasted and toasted and distilled to create smooth, sweet and nutty deliciousness. The hint of wattleseed amongst the butterscotch and cacao makes it a stand-out among other nut liqueurs, as well as unmistakably Australian. It's a versatile thing; it's great neat, on the rocks, with a slice of lime, in an Espresso Martini or even poured over ice cream.
