The coffee in this region has a long standing reputation for quality. Currently investing their fair trade social premiums into construction of schools, roading and transportation, electricity, flour mills, and warehouses. The Union is focused on improving coffee production infrastructure and support. Shanta Golba produces both washed and natural coffees in a very similar manner to the other primary groups in the union. This coffee will have been dried in the cherry at the washing stations on raised beds. The coffee has a blueberry or slightly overripe fruit aroma, the flavour is full and rich, dark caramel, berry fruit and rose petals. It has a silky wine-like body and a long and fruity aftertaste. Colombia – Quindio PRODUCER – Jairo Arcila VARIETALS – 100% Castillo PROCESS – Natural Grape Fermentation PROFILE – Candy fruits, grape, cognac finish This coffee was grown by Jairo Arcila at the farm Buenos Aires. This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, natural, fresh grapes and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with mashed fresh grapes placed amongst the coffee until the ideal moisture content was achieved.
