Bullion Hops for Dark Fruit, Spice, and Heritage High-Alpha Character Bullion is a United Kingdom grown hop, offered here in standard T-90 pellet form and remembered as one of the early English high-alpha varieties to make a real mark on brewing. Released by Wye College in 1938, Bullion came from the same Manitoba wild hop background that also produced Brewer's Gold, giving it a place in the family tree of several influential modern hops. Lot-specific flavor and aroma notes may include Spicy. That heritage helps explain why Bullion still matters. It is not a trendy modern aroma hop, but it offers a distinctive combination of firm bittering strength and dark fruit, spice, and old-world intensity that can add real depth when used thoughtfully. For brewers who appreciate classic varieties with historical relevance, Bullion has more personality than many cleaner modern high-alpha options. Flavor and Brewing Character Bullion is known for dark fruit and spice character, backed by a robust bittering edge that gives it a firmer, more assertive brewing profile than many softer English hops. Depending on use, it can bring richness and structure that feel especially at home in stronger or more malt-driven beers. In the brewhouse, Bullion is well suited to bittering, mid-boil additions, and selected later kettle additions where a brewer wants some of that deeper fruit-and-spice character to carry through. It fits naturally in stouts, imperial stouts, barleywines, doppelbocks, and other stronger beers that can support its more forceful profile. Why Brewers Choose Bullion Brewers who choose Bullion are usually looking for a hop with history, bitterness, and a more distinctive character than a generic bittering variety. It is a strong option when you want to add structure to a bigger beer while still keeping some dark-fruit and spice complexity in the background.
