The rum is distilled through continuous column stills using locally grown sugarcane and pure spring water, then laid down in ex-bourbon barrels for extended aging — up to 18 years for the oldest components in the blend. The defining production step comes at the end: a finishing period in Spanish white oak sherry casks from Andalusia, Spain, which imparts an additional layer of dried fruit sweetness and tannic complexity not found in the original Bumbu expression.Tasting NotesAroma: Toffee and toasted oak greet the nose first, followed by rich vanilla and a bright thread of orange zest. The sherry cask influence emerges as the rum opens up, adding a subtle dried fruit undertone beneath the caramel-forward top notes.Taste: The entry is soft and immediately sweet, with brown sugar and toffee coating the palate. At mid-palate, coffee and baking spice develop alongside hints of black pepper, while dried fruit and orange zest weave through the richer flavors. The sherry finishing adds noticeable depth, lending a slightly tannic structure that keeps the sweetness in check.Finish: Smooth and warming, with a length that extends well beyond the initial sip. Lingering spice notes — clove and pepper — fade gradually alongside residual toffee and a faint echo of toasted oak.How to Drink Bumbu XOBumbu XO rewards patient sipping, ideally neat or with a single ice cube that tempers the sweetness and opens up the spice and oak notes. A splash of water can further reveal the sherry cask influence. For cocktails, the rum's richness and complexity suit several classic builds: Old Fashioned (rum variation): The brown sugar and toffee character substitutes beautifully for bourbon, pairing naturally with Angostura bitters and an orange peel. Dark 'N' Stormy: The XO's coffee and spice notes stand up well against sharp ginger beer, adding an aged-rum sophistication to the drink. Rum Manhattan: The sherry cask finish makes this an especially natural fit alongside sweet vermouth, where the dried fruit notes complement rather than compete. Bumbu XO positions itself in the premium rum tier, and the up-to-18-year age statement combined with dual-cask maturation provides tangible production value that justifies its positioning above most flavored or lightly aged rums in the category. Why Bumbu XO?The dual-cask maturation — bourbon barrel aging followed by a sherry cask finish — is the defining feature here, and it is not a common technique in Caribbean rum at this price tier. With components aged up to 18 years, Bumbu XO delivers a level of oak integration and flavor complexity that many rums only achieve at significantly higher price points. The 88-point score from Tastings.com confirms its quality within the aged rum category. For drinkers who gravitate toward rich, dessert-forward spirits but still want layered complexity rather than one-note sweetness, this expression strikes a compelling balance.
