Aritsugu Nakiri KnifeThe Nakiri is a double-beveled vegetable knife with a straight blade that makes cutting vegetables easy. This is a substantial and weighty Nakiri from the Arit sugu brand. Some of the original kurouchi finish had worn away, so the blade was renewed with a black oxide finish.The dark section of the blade has a black oxide finish. This finish forms a stable oxide layer on the iron surface, helping to reduce the formation of red rust while giving the blade a subdued black appearance. The rugged black blade and polished silver edge create a striking contrast. With continued use and sharpening, the appearance of the black oxide finish will gradually change, which is part of the character of a carbon steel knife. As the finish was applied to a previously used knife rather than a new blade, the shade and intensity of the black color may vary depending on the original condition.
