Grapes are hand-harvested from vines planted in 1985 on glacial moraine just 500m from Lake Geneva, then treated to semi-carbonic maceration for up to three weeks prior to 12 months ageing in barrique. The name "Ca Boit Libre" is a brilliant play on words - drinking freely and Freedom for Savoie - and this wine embodies that spirit perfectly.
