This is an amazing bubbly wine, truly unique and rare, and if it were French and called Champagne it would be well over $100 per bottle. Made from organic grapes in the center of P enedes, the most classic region for Cava in Spain, this bubbly is my own blend and label. So it’s the way I like bubbly. It’s a blanc de blancs, so 100% Chardonnay with 60 months, that’s FIVE yes 5 years on lees. Crispy green apple notes balance the delicious buttered brioche toasty classic blanc de blancs quality.
