Acid gives a wine its awesome flavors and crispness. Sometimes a wine has too much acidity and needs to be lowered. To lower acidity use 1/2 teaspoon per gallon. Use before ferment ation. Do not reduce acid more than .30%. To get an accurate acid reading on your juice use an acid test kit (sold separately). Show more
