Cacao is the raw, unprocessed version of cocoa. It’s rich and famous flavor profile dates back valued uses by the Aztecs and Mayans.How is this powdered processed?Our cacao powder is created by cold-pressing raw, organic cacao beans into a pressed cake, separating the oil from the protein and fiber. During this process the temperature never exceeds 120° F. The remaining dry cake-like material is then cold-ground and fine-milled into a powder. The separated oil is what is known as cacao butter.What does 22/24% Fat Content Mean?The fat percentage refers to the amount of cacao butter remaining in the powder.
