From Tasmania’s historic midlands, Callington Mill has crafted a bold tribute to the sun-dried Pedro Ximénez grapes of Andalusia. This five-year-old single malt has been matured exclusively in rare PX casks, an all-in commitment that demands patience but rewards with depth. The result is a rich, mahogany spirit - velvety, indulgent, and full of character. It has already turned heads on the world stage, scoring 98 points and a Double Gold at the 2025 San Francisco World Spirits Competition, and claiming Single Malt of the Year at the London Spirits Competition. Nose:Honeycomb and caramel at first, moving into plum, licorice, cinnamon, and a touch of floral grappa. Palate:Silky and mouth-filling, with layers of fig jam, dark chocolate, toffee, Asian spice, and charred oak. Sweetness holds steady, giving the young spirit a lively stage to shine. Finish:Lingering and moreish, with Biscoff biscuits, dried figs, and toasted nuts. Balanced by a touch of oak that keeps it elegant rather than cloying.
