Calm Restlessness 2025 is a blend of organic ale, organic grape skins, organic grape wine and sour cherries. The ale was brewed with organic red wheat and organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW and refermented with freshly pressed Pinot Noir grape skins from our friend James Madden of Scintilla Wines in the Adelaide Hills of South Australia in 2025. It was blended with a portion of Shiraz and Grenache grape wine and sour cherries then bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release. Made exclusively for Erik Lu, our Shanghai-based importer and The Collective. Chris and I met Erik for the first time at Arrogant Sour festival in Italy in 2018 or 2019. He had an excellent beer bar in Shanghai (since sold) and was the importer for a number of our Belgian friends, including Cantillon. He asked us then if we would start working with him and for the past 6 years or so, he has been our sole representation in China. With a significant anniversary arriving for his import business, he reached out to ask if we would blend something for him and this is the result. This beer is akin to Thomas and Walter being blended. Its fruit forward but elegant. The name came from conversations between Erik and I as I'm quite interested in paradoxes, especially those in lexicon, and we settled upon this phrase. Erik says that "In Taoist thought, the idea that "stillness is the ruler of restlessness" holds that calmness静 governs agitation躁.
