Camel suet renders down to something almost completely neutral — no aroma, no beefy finish, nothing fighting whatever you've put in the pan. And here's the part nobody else can say: everyone renders the hump. We render the suet — the fat from around the kidneys. There's a fraction as much of it on the animal, which is why nobody else bothers with it, and why this is the only one of its kind we know of.
