The Gueuze comes from what is arguably the most authentic Lambic brewery around: Brasserie Cantillon. It's a blend of one-, two-, and three-year-old Lambic, which undergoes seconda ry fermentation in the bottle. While the mature, three-year-old Lambic adds its funky, wild aromas, the "young" one-year-old Lambic provides the necessary freshness and secondary fermentation in the bottle. This blended Lambic allows the carbonated Gueuze to emerge. The pleasantly fresh acidity and fruitiness blend perfectly with the bitter notes of the wild yeast and the oak barrel.
