Each October, Cantillon receives a delivery of white Italian grapes — currently Viognier, switched from Muscat when they could no longer source organic fruit. The grape sugar softe ns the acidity slightly compared to the Gueuze, and the Viognier aromatics — apricot, peach blossom, white flowers — come through in a way that makes this feel closer to a white wine than most lambics dare to be.Delicate is the word.
