This Nero d'Avola undergoes fermentation in temperature-controlled stainless steel tanks at 18°C for 18 days, with maceration on the grape skins for 10 days to extract maximum color and phenolic depth. The wine is then aged exclusively in stainless steel, a deliberate choice that preserves the unaltered character of the grape rather than layering on oak influence — allowing the raw varietal personality of Nero d'Avola to take center stage.Tasting NotesAroma: The nose opens with pronounced sour cherry and prune, moving into darker territory with blackberry and black olive. A second wave brings more complex notes of black pepper, tar, and a distinctive inky minerality that signals the grape's deep Sicilian roots.Taste: The entry is soft and round, with sweet cherry fruit and wild strawberry leading into a full-bodied mid-palate layered with dark chocolate, coffee, and subtle umami tones reminiscent of balsamic vinegar and mushroom. Despite its weight, the wine stays juicy at its core, with vibrant acidity cutting through the richness and keeping everything in motion.Finish: Medium-long and textured, with semi-evolved tannins lending a crisp, slightly grippy close. Lingering notes of sour plum, dark earth, and a faint bitterness recall espresso and dried herbs. How to Drink Colosi Nero d'AvolaServe at 16–18°C (60–65°F) in a large-bowled glass to let the aromatic complexity unfold. This wine drinks well on its own but truly shines alongside food. A Kalimotxo (red wine and cola) may seem unconventional, but Nero d'Avola's bold fruit and acidity handle the mix with surprising grace. In a classic Red Wine Sangria, the cherry and plum notes amplify the fresh fruit additions without becoming muddled. For a warming option, its spice and dark fruit backbone makes it an excellent base for Mulled Wine, standing up to cinnamon, clove, and citrus peel.Best For Weeknight Italian dinners featuring pasta with meat-based sauces Introducing someone to Sicilian wines beyond the usual Chianti or Montepulciano Building out a Mediterranean wine collection at an accessible entry point Pairing with a charcuterie and aged cheese board for casual entertaining Frequently Asked QuestionsWhat does Colosi Nero d'Avola taste like? The all-stainless-steel production is a deliberate stylistic statement — stripping away the oak mask to reveal the grape's inherent Sicilian character, from iron-rich minerality to the distinctive sour cherry and black olive interplay that defines top-quality Nero d'Avola. Where many producers in this category lean on barrel aging to add complexity, Colosi achieves it through extended skin maceration and precise temperature control, resulting in a wine that feels both modern in technique and deeply rooted in its terroir. For anyone seeking an authentic, unmanipulated expression of Sicily's flagship red grape, this is a benchmark starting point.
