Carbon is an open-pollinated tomato variety that produces excellent yields of large, juicy tomatoes with a deep, dusky purple coloring. Winner of the “Best Tasting Tomato” award at the 2005 Heirloom Garden Show, Carbon remains one of the most respected black tomatoes among gardeners and flavor enthusiasts alike. It's flavor—often described as sweet, tangy, and sometimes smoky—is every bit as complex and delicious as established heirlooms like Cherokee Purple and it has uniform ripening to boot. The Carbon tomato is here for the long haul. In our trials, Carbon produced an abundance of well-formed tomatoes averaging about 12 ounces each. The shoulders sometimes stayed a touch green when ripe, as is typical for black tomatoes, but the interiors were stunning: deep watermelon-red flesh, meaty texture, and just enough juice to make every slice perfect. Its flavor earned it the simple but definitive note: “That one’s good.” Carbon is a tomato that manages to be both refined and robust—complex in flavor yet easy to love.
