The carrot is a delicious root vegetable and one of the few that is commonly eaten raw. Rich in vitamins and minerals, as well as being a very good source of beta-carotene, which o ur body converts to vitamin A, which in turn helps maintain a health immune system. Vitamin A is also helpful in promoting vision health, but eating large amounts will not give you "night vision" as was touted during WW2. The promotion of consuming carrots and other deep green leaf vegetables was used as propaganda by the British to cover their invention of aircraft mounted radar - instead claiming that their pilots had developed night vision by eating lots of carrots! Carrots are generally orange, but varieties of purple, white and pale yellow also exist. These are sold by the bunch, which is generally about 4-6 carrots and approximately one pound. Show more
