A hallmark of french country cooking, the traditional cassoulet is a rich slow-cooked stew filled with beans ,sausage, pork and duck fat. In this version, I use a rich vegetable ba sed stock made with carrots parsnips, onions, tomatoes, walnuts and shoyu that both provide amazing flavor and lots of nutrients.
