About 'CC' by Patrick Bouju & Justine Loiseau of La Bòheme This vintage of CC is an Auvergne Chardonnay blended with Chenin and Sauvignon from the Loire. Spontaneous fermentation w ith brief skin contact and pressing, aged in used oak barrels, zero added sulfites. This wine is spot-on—dry, fruity, and super refreshing. The nose immediately shows aromatic complexity with white flowers and yellow fruits, citrus, and candied notes. On the palate, there's a perfect balance between volume and creaminess on one side, acidity and tension on the other. Saline, mineral, long.
