Celery flakes are nice to have on hand when you need a tablespoon or two of celery, or when your fresh celery seem s to have wilted away. 1 tablespoon equals one small fresh stalk. Just throw into soup or stock, but for roasts or casseroles, celery flakes should be rehydrated before adding.
