LIVELY, JUICY, AND FULL OF CHARACTER Ciliegiolo 12,5% alc. Certified Organic Description: Light to medium body with a lush red color, low acidity and mellow tannins. Fruity and int ense aromas with juicy notes of black cherry with hints of strawberry and pomegranate. Recommended Pairings: A highly drinkable red that does well on its own but can also be paired with charcuterie boards, fresh pastas, legume dishes, medium seasoned cheeses, and white meats. In the Cellar: About a third of the ciliegiolo grapes underwent carbonic maceration for 3 weeks, then finished on the skins in fiberglass tanks where they aged for six months. The remaining two/thirds of the ciliegiolo and small percentage of Sangiovese were fermented with the skins on in fiberglass tanks, then pressed and aged in old oak barrels for six months.
