CEYLON CINNAMON is also called "true" cinnamon. It is light beige, has a fragrant perfume, and an aromatic, sweet taste. Real Ceylon cinnamon has papery quills with many layers, an d shouldn't be confused with the darker CASSIA quills. Ceylon cinnamon is often found in Mexican, Middle Eastern, Moroccan and Indian cuisines. SUGGESTED USES: This cinnamon is ideal for savoury cooking, as it is not over-powering and has a more delicate flavour than cassia.
