Shallots bring a mild, sweet onion flavour that enhances sauces, sautés, roasts, salads, and dressings. Peel and trim the ends, then slice, dice, or leave whole depending on the re cipe. Sauté in a little oil until translucent for 3–5 minutes, caramelise slowly on low heat for 15–20 minutes, or roast whole at 180°C for 20–25 minutes until tender and golden. For raw use, finely slice and briefly soak in cold water to soften their bite before tossing into vinaigrettes, relishes, and fresh salsas. Show more
