Bernard Defaix established the family Domaine in 1959 in the heart of Chablis , starting with a mere two hectares of vines. Nowadays, Bernard's two sons Sylvain and Didier manage t he operations in the vineyards and the winery. Together, they now own more than 27 hectares spread across the appellations of Petit Chablis, Chablis and Chablis Premier Cru (Cote de Lechet, Vaillons and Lys). The pair organically farms their vines and uses biodynamic techniques to energise the soils. The style here is the epitome of Chablis: mostly stainless steel tanks fermentation and maturation. This 2020 Chablis is made from 12 hectares of classified vineyards and settled in tanks only to maintain the typical freshness of the region's style. Show more
