We practice high-end viticulture to maximize the potential of our vines, highlighting the unique characteristics of the Shabo terroir. Hand-harvested early in the morning, the grapes arrive at the winery within 15–30 minutes for immediate processing. They undergo destemming and gentle crushing and pressing in pneumatic French presses (Pera), with the must selection done exclusively bytasting to ensure the highest quality. Fermentation takes place in stainless steel tanks, followed by brief aging on fine lees for less than a month, enhancing freshness and purity.
