On the palate, the wine reveals a precise, dry character, driven by vibrant acidity and a distinct minerality. The absence of dosage (Brut Nature) allows the inherent quality of the fruit and terroir to shine, delivering a clean, refreshing finish. Notes of almond and a slight creaminess can also be present, adding complexity to the overall experience. Chavost is led by young Chef de Cave Fabian Daviaux toward 100% Natural Champagne within a traditional cooperative established in 1946. Daviaux's mission was to remove the "makeup" of traditional Champagne, opting for no sulfur and no sugar to let the fruit of Chavot-Courcourt terroir speak for itself.
