Eurêka Champagne from Chavost consists of a blend of 70% Pinot Noir, 15% Chardonnay, and 15% Pinot Meunier. Exclusive to this Cuvée is the incorporation of juice exclusively from t he first pressing and the addition of concentrated grape must during vinification. Its character stems from natural fermentations, both alcoholic and malolactic, utilizing native yeasts and bacteria, all carried out in temperature-regulated stainless steel vats.
