One wedge (6-7 oz.) of raw milk Fairmount cheese from Skyview Farm. This Havarti-style cheese has a full, rich flavor and firm texture with just the right amount of funk. Named aft er a 130-year-old church in Pleasanton that was destroyed by a tornado. Skyview cheese is made from the milk of their small herd of pastured Jersey cows. Jersey milk is known for its creamy flavor due to the higher butterfat content, which also has a higher concentration of protein and calcium than regular milk.
