Mimolette Extra Old is known for its complex flavor profile, combining nutty, caramel, and butterscotch notes with a hint of saltiness. The aging process also imparts a unique sharpness and a touch of sweetness, making each slice a gourmet experience. The natural rind, formed during maturation, adds an earthy aroma and a rustic charm to the cheese. Originating from the Lille region in France, this cheese is crafted from pasteurized cow's milk and is aged for at least 18 months, resulting in a firm, crumbly texture and a deep, rich orange color.
