Description Chitosan is a sugar that comes from the outer skeleton of shellfish, including crab, lobster, and shrimp. When added to wine or beer, a mild electrostatic attraction bi nds yeast and other particulates to the Chitosan. This accelerates the sedimentation process (flocculation), clarifying the beverage more quickly and effectively.
