Choco Macron Cake – chocolate cake meets French fancy Right. Macarons. Not macaroons – those coconut things. Macarons – the delicate, colourful French biscuits with the crisp shell and chewy centre. Now imagine a chocolate cake covered in them. That’s this. It started when someone in Sydenham asked if I could do a cake that looked as pretty as a macaron box. I said yeah, course. So I made a dark chocolate sponge, filled it with a smooth chocolate ganache, then covered the sides and top with a ring of mixed macarons – pink, purple, blue, yellow, whatever looks good. It’s like jewellery for a cake. What’s in it? Dark chocolate sponge – rich but not heavy. Chocolate ganache between the layers and a thin layer on top (just enough to stick the macarons). Then I arrange the macarons around the edge and pile a few on top. Sometimes I add a drizzle of white chocolate or a dusting of gold. Where to get it I bake these in Bromley. People from Downham, Grove Park, Catford and Bellingham keep ordering them for birthdays, anniversaries, or when they want to impress someone. I deliver local, or you can collect from the shop. Who’s buying this? Anyone who loves macarons but can’t afford a box of twenty. Anyone who wants a cake that looks like it came from a patisserie. Also, people who want a photo for Instagram – this one’s very photogenic. One thing to know The macarons are bought from a good supplier – I don’t make them from scratch (life’s too short). But they’re proper French ones, crisp and chewy. They might soften a little after a day because of the cake’s moisture, so best eaten within 24 hours. Right.
