These bite-sized, caramelized-nut Dragées feature fresh, California grown Braga Organic Farms almonds. When we set out to make these, our Confections team ran extensive taste tests with a dozen different almonds — some roasted, others blanched, some grown locally, others from as far as Italy and Iran. In the end, we selected Braga almonds, grown nearby in San Joaquin Valley. They’re a flavorful nut we’ve come back to time and time again. We caramelize the almonds with a hint of fleur de sel, then generously coat them in layers of our tropical-fruit-noted 70% Takyikrom, Ghana chocolate before dusting them with Zorzal cocoa powder.
