Türkiye grows more hazelnuts than any other country, supplying roughly 70 percent of the world's crop, almost all of it from the Black Sea coast where Giresun, Ordu, and Trabzon make up the country's famous hazelnut belt. Giresun's prized Tombul variety is so closely tied to its origin that the European Commission granted "Giresun Tombul Fındığı" a Protected Designation of Origin in 2022. That is the growing tradition these nuts belong to. Chopped hazelnuts are a baker's shortcut and a finishing touch at once. Stir them through cake and muffin batter, brownie mix, or cookie dough for pockets of texture. Press them into the sides of a frosted cake, scatter over cupcakes, tarts, and cheesecakes, or fold into baklava and pastry fillings. They melt into the background of homemade chocolate, hazelnut spread, and pralines, and they lift everyday breakfasts too, sprinkled over granola, yogurt bowls, porridge, or ice cream. A short toast in a dry pan before use wakes up the aroma even further. Because the nuts are already broken, more of their natural oils are exposed to air, so they keep best in an airtight container somewhere cool, dark, and dry, away from strong smells.
