The harvested cherries rest overnight in sealed bags, and the following morning they undergo density sorting via floating and manual inspection before pulping. The coffee is depulped and undergoes a 48-hour dry fermentation with the mucilage intact to highlight the bright acidity and floral notes characteristic of this Ethiopian variety. It is then thoroughly washed to cleanly halt the fermentation process, and the parchment coffee is transferred directly to a greenhouse for even drying. We taste: An elegant, dynamic cup that evolves as it cools. Expect bright citric acidity, a floral jasmine aroma, and ripe peach. It's the perfect balance between a Gesha and a washed Ethiopian heirloom. Outstanding!
