They did a lot of different presses, working with texture all the way, pressing until they felt that the texture was right. Rich mandarin nose, slight hint of flower nectar. Rich and tense - apricots, sweet satsuma, a tiny bit of caramel brioche. Gorgeous tight-knit acidity, shimmering with intensity. Structure and tension, really exciting. Long.
