There are over 500 small distillers in Haiti making Clairin, an unaged Rum from raw sugar cane. The Spirit of Haiti brings together a handful of these small producers under one lab el, bottling each individually to showcase the vast diversity in the flavors produced in this funky cousin to Rhum Agricole. Produced on the north side of the southern fork of the island, Casimir is using a sugar cane native to Polynesia. They add citrus and lemongrass to the fermentation to regulate pH.
