CLOVES are indigenous to the Spice Islands. They are the dried, unopened buds of a tropical evergreen clove tree native to the Maluko Islands of eastern Indonesia. They have a warm , aromatic scent, and a flavour that is intensely pungent: warm, sweet, almost medicinal. They are found in all kinds of cuisines, and are are an essential ingredient in Indian GARAM MASALA, Asian CHINESE FIVE SPICE, and British BAKING SPICE.
