Crudo means raw. At the center of each of these confections from Dandelion Japan is a whole, unroasted cocoa bean from Farm of Africa, in eastern Uganda’s Kayunga District. Those b eans are exceptionally pure in flavor — they’re hand-harvested, fermented, dried, and hand-peeled. Rather than getting roasted at our factory, each batch of beans is treated with UV light at origin, making them safe to eat while preserving their delicate flavor notes. Our Tokyo makers coat each bean in raw organic Brazilian cane sugar, then layer on tangy-sweet Semuliki Forest chocolate, crafted with beans grown in western Uganda. Lastly, a dusting of powdered sugar. Two terroirs and two forms of cocoa meet in one balanced bite. Show more
