At 55ºF - 60ºF (13ºC - 16ºC) with a relative humidity of eighty to eighty-five percent, the shelf life decreases to less than two weeks. Avoid low relative humidity and high temperature which may lead to mold and weight loss. A rapid temperature change of 15ºF (8ºC) or more during storage can lead to cracking. Coconut is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Coconut produces a very low level to near zero ethylene. Coconut is not sensitive to chilling injury.
