Makes: 10 rotis Preparation time: around 10 minutes, plus 10–30 minutes proving You'll need: plain flour and a few cupboard basics (see below) What's in the kit A pre-mixed blend of coconut flakes, coconut milk powder and vegan salt — just add flour, water and oil. What you add Shopping list: 400g plain flour — traditionally Sri Lankan coconut roti is made with plain flour. If you'd like to try something different, wholemeal, atta or gluten-free flour also work well. You may already have: 2 tbsp oil 1 cup (240ml) warm water Extra flour for rolling Utensils: Mixing bowl Frying pan Spatula Rolling pin How to make it Empty the pack into a bowl, add flour and water and knead into a ball that isn't sticky. Spread the oil on the dough, cover and let prove for 10–30 minutes. Divide the dough into 10 pieces. Roll into 0.5cm thick rotis on a lightly oiled surface or press out with your palm. Avoid making them too thin to prevent them from drying out. Heat a frying pan to medium, cook each side for 2–3 minutes until light brown with a few darker spots. Tip: Mix the entire batch to ensure an even distribution of ingredients. Freeze any unused portions for future use.
