A bone-dry refreshing sparkling wine with virtually no residual sugar. Rich, toasty and savoury, with a creamy mousse, a dry finish and lots of nutty, honey notes. With the added twist of a saline profile from the aging under flor yeast, and the addition of Palo Cortado and Amontillado from Sanlucar which gives it a subtle complexity. The southern presence is felt in the secondary fermentation and especially in the use of different dosage wines. This Extra Brut has enjoyed an ageing process of 30 months. The base wine is 100% Xarel.lo coming from the Colet vineyards in the hills of Penedés, and the Jerez contribution of Palo Cortado and Amontillado.
