A bold-bodied medium roast with notes of honey and cherry, a balanced body, and a bright finish. This is Colombia Supremo 17/18 — the grading refers to screen size, and it means these are among the largest, most uniform beans the harvest produces. Uniform beans roast evenly, which is a large part of why this cup is so consistent from bag to bag. It is grown on small and medium family farms in and around Pereira, in the department of Risaralda. The farms average about two and a half hectares — small enough that the same family picks, mills and dries its own coffee. Drying happens on elevated tables inside solar dryers, which is what makes coffee possible at all in a region that is wet nearly year-round.
