Mataro is a brilliant variety to work with - leaning towards savoury red fruit rather than the inherent sweetness of Shiraz, with expressive aromatics and a gentle, slow release of colour from the skins. Grown in the Barossa's tougher soils, these smaller berries ripen gradually under warm days and cool nights, resulting in a wine of striking aromatic lift, bright red fruit purity, and crisp, refreshing acidity.
