Everything that goes into the cookies I sell. A decorated cookie is two recipes standing on each other. If the dough spreads, no amount of icing saves it. If the icing won't set, the prettiest cookie in the world can't be bagged, gifted, or shipped. Most people who struggle with decorating aren't struggling with decorating at all — they're struggling with one of these two foundations. This is both of them, together. My No-Spread Vanilla Sugar Cookies — the dough underneath nearly everything I make. Holds its shape, keeps crisp edges, bakes flat enough to decorate cleanly, and still tastes like a cookie somebody wanted you to eat. Royal Icing Made Simple — the icing behind every custom order that leaves my kitchen. Dries smooth and matte, sets firm enough to stack and ship, with a soft bite instead of a shatter. I'd only ever shared these two with a handful of people close to me. They're the recipes I built this business on.
