This coffee comes from Brazil and features a single-varietal Yellow Catuai. Roasted to a City–Full City level (Medium-Dark+), it’s grown at 1300 MASL and processed naturally. This specialty coffee is sourced from the renowned Carmo de Minas region, situated in the Mantiqueira mountains in the south of Minas Gerais. This area is celebrated for its exceptional conditions for growing high-quality, tracible beans on micro farms, situated at 1,300 MASL. The processing method includes a rigorous sorting stage where defective cherries are removed using water density control. The finest cherries are then initially dried on a patio for 3 days before being transferred to mechanical dryers. In the dryers, they are dried for 72 hours until the desired moisture content is achieved. The coffee is rich and complex, with deep dark chocolate, hazelnut, and raisin notes. This roast is highly requested both in coffee and cold brew offerings.
